The Pulse Of Our Times

“Pulse” is a term describing the edible seeds of several legumes such as beans, peas, lentils and chickpeas. Though most people aren’t familiar with the term, pulses have actually been a direct-from-the-farm food staple worldwide for centuries. Among the planet’s most naturally nutrient-rich foods, pulses are also a significant prebiotic, an essential plant fiber we all require to function optimally.

According to experts, pulses are not only affordable  and tasty, but contain double the amount of proteins found in wheat and triple the amount found in rice while also being rich in micronutrients, amino acids and B vitamins. As such, they are not only a vital facet of a healthy diet but can represent an essential source of nutrition and farming revenue in developing countries.

Under the slogan ‘nutritious seeds for a sustainable future,’ the United Nations, led by its Food and Agriculture Organization (FAO), declared 2016 The International Year of Pulses to raise awareness about the nutritional, environmental and economic benefits of all varieties of dried beans and peas.

In a news release issued late last year, FAO Director-General José Graziano da Silva commented, “Pulses are important food crops for the food security of large proportions of populations, particularly in Latin America, Africa, and Asia, where pulses are part of traditional diets and often grown by small farmers. They have been an essential part of the human diet for centuries, yet their nutritional value is not generally recognized and is frequently under-appreciated.”

In a separate release, Cindy Brown, a Wisconsin pulse producer and the Vice President of the International Pulse Trade and Industry Confederation, noted, “Pulses are destined to play a huge role in {our} health and nutrition {and the} environmental sustainability of agriculture in our nation. The fact that the United Nations dedicated a year of celebrating pulses on a global scale should help raise awareness to the potential value of pulses in the United States as well.”
